My favorite sweet potato pie
filling
40 oz can sweet potatoes drain well and mash
1 cup sugar
2 eggs
1/2 cup butter
1 tsp vanilla
1/3 cup milk
cinnamon to taste
topping
1 cup light brown sugar
1 cup chopped nuts (use your fav)
1/3 cup self rising flour
1/3 cup butter
Bake at 350 for about 45 minutes or until topping is browned and knife comes out slightly wet but clean. When doing in pie shells cooking time will be slightly less.
Filling will do two prepared pie shells or one 9x13 casserole dish.
Since I've become a nudist, I've been really esploring the "back to nature" thing through and through. Looking at food, clothing, and shelter in a whole new way. Does anyone have any good recipes for whole food cooking? Foods that have been processed very little or that have few additives. I'm realizing that not only is the food tastier, but I really do feel better eating it. I'll post whole food recipes as I cook them and give y'all a review. Here's' something I like to do that can be as simple and natural as you want it to be. Make some spaghetti sauce, using whatever indredients you like. I usually just go with canned tomato puree, and add some white wine (or beer - I'm a heretic when it comes to cooking). I'll add in the spices like salt, pepper, garlic, oregano, crushed red pepper, or a dash of Crystal hot sauce. Let it simmer for a while, and just before the end, add in some sauteed peppers, onions, and mushrooms. Also make whatever pasta you like. I'm a big fan of Ronzoni Smart Taste pastas, but you can make your own if you like. Once you start the pasta, slip a couple pieces of some kind of white fish (like tilapia or dolphin) into the sauce, letting the sauce cover the fish. Throw some veggies into the steamer, but watch the time. The fish will only need a few minutes in the sauce before it's done (up to ten minutes, depending on how much fish you throw in).
Dig the fish out, serve it beside the pasta with the sauce over the top, and the veggies on the side...
Ummm....Tx? Recipe sounds interesting but you should have seen the look on the face my local grocery butcher when I asked him (totally dead pan) for a pound of rattle snake, lol. Have to admit, even being a native Texan myself, I've never tried rattle snake. Think I put it right up there with "road kill" Chilli! Jen If vegetarians only eat vegetables, what do humanitarians eat?

Thomass special Enchiladas
1 pound hamburger meat 1 pound pan sausage
1 pound grated cheddar or Monterey Jack Cheese
2 cans tomato sauce 1 medium onion, diced
24 corn tortillas 24 toothpicks
Chili powder, seasoned salt, pepper and garlic powder to taste
NOTE, since sausage is already seasoned, will use less seasonings, amount for 1 pound of hamburger only.
Brown sausage and hamburger with seasonings and drain excess fat.. Steam tortillas to soften. Fold in half like a taco and fill with approximately 1 tablespoon each of meat and cheese and sprinkle diced onion on top. Roll top closed and hold in place with toothpick. Place in baking dish are repeat till all done. I use two 9x9 pans normally. Sprinkle any remaining meat and onions on top. Pour tomato sauce evenly over top and sprinkle any remaining cheese on top of that. Bake at 300 for about ten minutes, till cheese s melted.
I normally eat four, so will freeze half of them so I dont have leftovers for so long. If you freeze them, bake about 25 minutes to make sure they are heated throughout and cheese is melted inside

Lauri, Check out The Moosewood Cookbook, it's got some wonderful whole foods recipes. Would share a few with you here, but lost a lot of my cookbooks during confusion of my divorce many years ago.

i try to tell people who eat my marinated chicken what i marinate it in. nobody believes me and think i try to keep it a secret. but if you don't mind a little booze, try marinating boneless chicken pieces in light rum and garlic and leave in fridge overnight. of course you need to roast garlic in the oven to get just the right flavor. bake chicken as usuall, or grill it if you can, brushing with your fav bar-b-que sauce mixed with spiced rum, no more than 1:10 ratio. oh yeah, don't throw out the marinade, use it with tomato sauce and some basil to make a sauce for some noodles. serve chicken on side of pasta, not mixed.
no matter who has tried it, they loved it.and if you make your own pasta noodles and use a food processor for the tomato paste, all you need is free range chicken and you won't have to read any labels.
but i think i need to get some rattlesnake to use one of these days. that just sounds good. for some reason, i think i will change the rum to whiskey for that though. whiskey has a stronger kick in the bite for me.
