Leftover Soup Recipes
Over the last two years I have been working from home so have started cooking lunch every day. One of my go to lunches is leftover soup which turns out good every time. The recipe starts with 2 cups unsalted chicken broth, then I add pasta noodles from a single serve package or frozen hash brown potatoes with onion, next I put left over vegetables (whatever is in the refrigerator) or frozen vegetables. I add whatever meat is available and seasonings. For the meat I might cut up a sausage if I have nothing else to use. I cook it until the pasta, potatoes, and vegetables are tender. The soup is never the same but always tasty. Also, by making it a soup it fills me up and keeps me on my diet. I will have crackers or toast with it.
