Easy dishes
I'm a big fan of these that are easy to make and easy to clean up after. Here are a couple of my favorite easy recipes:
EASY PASTA SALAD
Ingredients:
16 oz. package small shell pasta cooked, rinsed, and drained (I like whole wheat)
8 oz. bottle of Italian salad dressing
Bottle of McCormick Salad Supreme seasoning (use half the bottle)
2 medium cucumbers, chopped
2 medium tomatoes, chopped
1 large red onion, chopped
1 red, 1 orange, and 1 yellow bell pepper, chopped
1 large can of sliced black olives
Instructions:
Put pasta in a large salad bowl.
Add chopped cucumbers, onion, and peppers, and sliced olives.
Pour in entire 8oz. bottle of Italian dressing and 1/2 bottle of Salad Supreme seasoning.
Mix everything together with your hands and refrigerate overnight.
Just before serving, add chopped tomatoes mix everything together again with tongs or with your hands.
Here's an easy and tasty tomato and pasta dish.
1/2 lb. pasta, angel hair, linguine, any kind will work
1 tbsp extra virgin olive oil
3 or 4 roma tomatoes, diced (you can use any kind of tomatoes you have)
1/2 medium onion, chopped
3 cloves garlic, chopped (I'm a garlic freak so I use more like 5 or 6)
1 tbsp basil, again I usually add more
2 tsp chicken boulion
1 tbsp butter
salt and pepper to taste
Cook pasta until done to your liking. In a pan cook onion and garlic until they start to soften, a few minutes, add chopped tomatoes, basil, boulion, salt and pepper. Cook until the tomatoes start to soften and break down a little, add butter to help thicken and toss with the pasta, top with grated cheese. You can also add a couple spoons of the pasta water to the mix if you like a little more sauce.
