Glazed Crumble-Topped Coffee Cake

2 C. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 C. butter, room temperature
1 1/4 C. brown sugar, packed
2 large eggs
1 tsp. vanilla
1 C. Greek yogurt
Topping:
1 C. brown sugar
1/2 C. sugar
2 tsp. cinnamon
1/2 tsp. salt
1 C. butter, melted
2 1/2 C. flour
Glaze:
1/2 C. brown sugar, packed
1/2 tsp. vanilla
Directions1.Preheat the oven to 350 degrees and lightly
grease a 9x13 baking dish. To make the topping, combine the sugars,
cinnamon, and salt in a bowl. Whisk in the melted butter and flour.
Combine until just moist. Spread out the topping on a piece of wax
paper to dry it. Set aside. In a large bowl, mix the flour,
cinnamon, baking soda, and salt. In another bowl, beat the butter
and sugar together with an electric mixer until light and fluffy,
approximately 2 to 3 minutes. Beat in the eggs, one at a time,
until well mixed. Beat in the vanilla until well combined.
Alternating between the Greek yogurt and the dry ingredients, mix
them into the bowl with the wet ingredients. Beating to combine in
between additions until just incorporated. Scoop the batter into
the baking dish and smooth out evenly. Sprinkle with the topping,
pressing the crumbs into the batter with your fingers. Bake for 30
to 35 minutes, or until baked through. To make the glaze, whisk the
brown sugar, vanilla, and 2 Tbs. water. Whisk until smooth. Once
the cake is cooled, drizzle the glaze over the top.
NotesThis sweet coffee cake is piled high with an amazing crumb
topping and drizzled with a decadent glaze. Start your day off
right with this cake and a steaming mug of coffee or a big glass of
milk.
