BLUEBERRY SCONE
Your blueberry muffin will pale in comparison to this fluffy
homemade scone! Use fresh blueberries to enhance the fruity
flavor.
4 cup Flour
6 TbspSugar
4 1/2 tspBaking Powder
1/2 tspSalt
2/3 cupCold Butter
2Eggs
3/4 cup +2 T. 2 % Milk, divided
1 1/2 cupFresh Blueberries
DIRECTIONS:
Preheat the oven to 375 degrees. Combine the flour, sugar, baking
powder, and salt in a bowl, then cut in the butter until the
mixture hasa crumb texture. In another bowl whisk the egg and
3/4 cup milk together and add the dry
ingredients until moistened. Finally, knead in theblueberries
gently so you
don't smash
them. Divide the dough in half and press each half into a circle.
Cut the circles into wedges andplace them on a baking sheet.
Brush on the remaining milk and bake for 20 minutes until the tops
are golden brown.
