RE: Vegan/Vegetarian

I have been a (mostly) vegan for about 4 years now and really have enjoyed it. Living in the Midwest, there are limits to how far a person can really go without making some occasional compromises, but I've found it to be fun trying out new foods and recipes I never would have considered in the past. Meat substitutes and non-dairy cheeses have come a long way just even in the last couple of years, and you would be surprised what you can find at Target these days, without setting foot into a Whole Foods. It takes time at first to get into the swing of slower food prep instead of grabbing fast food, but the trick is to find things you like, and don't go cold turkey (or tofurkey), do it gradually - don't think you have to punish yourself and eat nothing but salads - there's a ton of other great stuff to try, and plenty of vegan blogs and recipe sites to get tips from. One of my favorites ishttps://theveganstoner.blogspot.com/ - mostly pretty easy and quick recipes, and nothing too over-the-top.

Due to the influence of a Chinese friend, I now consume twice as much vegies as before Christmas 2014. Diagnosed as pre diabetic at Christmas and now, due to a regular diet free of bread and potato (except occasionally) and more light exercise, I am now back to normal blood sugar levels. There is a movie out called "Forks Over Knives." I think you would benefit from watching it. It was written by a physician. He showed many examples of people getting off a lot of meds such as blood pressure and diabetic meds by following a vegan diet. As always, discuss with your physician before discontinuing medications.
